How to make the best healthy kodo millet sweet recipe

Here I’m explaining the ingredients and method of making a healthy kodo millet sweet.

Ingredients

  1. Unpolished kodo millet – 1/2 cup (any millet except finger millet and pearl millet can be used for this recipe)
  2. Water – 1.5 cups
  3. Jaggery powder – 1/2 cup
  4. Cardamom powder – 1/4 teaspoon
  5. Roasted cumin powder – 1/4 teaspoon
  6. Scraped coconut – 1/2 cup
  7. Ghee – 1 teaspoon
  8. Salt – a pinch

Method

  1. Wash and soak the kodo millet overnight or at least for 4 hours. If you are using kodo millet the water color while rinsing and washing will change to brown but it’s okay.
  2. In a pan cook the kodo millet with water. 1:3 is the ratio of kodo millet and water.
  3. After the millet is well cooked, add jaggery powder, cardamom powder, roasted cumin powder, scraped coconut, ghee and salt one by one and combine well.
  4. Switch off the flame and serve the sweet millet rice.

  1.  Soaking millet is mandatory for the complete health benefits.
  2. Discard the millet soaked water after soaking, don’t use it for cooking.
  3. Adding ghee helps to absorb the nutrients fast from millets.
  4. Add more jaggery if you want more sweetness.

Variations you can try

  1. You can use any millet except finger millet and pearl millet can be used for this recipe.
  2. You can add little ginger powder for this recipe along with cardamom powder and cumin powder.
  3. You can make this recipe with any one of the spices, cardamom or cumin powder too.

Healthy kodo millet aval/poha/ flakes sweet is very tasty and nutritious.

Here I’m using kodo millet flakes/ flattened millet but you can use any millet flakes of your choice.

Flattened millet/ millet flakes is called as poha millet in Hindi and aval in Malayalam. In Malayalam this recipe is called as Aval Nanachathu means softened flakes.

Here I’m explaining the ingredients and method of making healthy sweet Kodo millet flakes sweet aval/ poha/ flattened millet.

Ingredients

  1. Kodo millet flakes or any millet flakes – 1 cup
  2. Grated fresh coconut – 1/2 cup
  3. Jaggery powder – 2 tablespoon or adjust to taste
  4. Cardamom powder – a dash
  5. Roasted cumin powder – a pinch
  6. Ghee – 1/2 teaspoon
  7. Milk – 1 tablespoon (to make the millet flakes soft)

Method

  1. Combine all ingredients (except milk) well.
  2. Add milk to make the millet flakes soft.
  3. Keep it aside for 10-15 minutes.
  4. Serve with roasted nuts and chopped banana.

  1. You can use any millet flakes or other grain flakes for this recipe.
  2. You can slightly roast the millet flakes and use it, if required.
  3. Adding ghee in millet recipes helps the body to absorb nutrients fast.
  4. Don’t add water to this recipe to make the millet flakes soft. Either add milk or coconut milk or even coconut water.

Variations you can try

  1. You can add roasted nuts and chopped banana before serving. Either mixed with this snack or as a garnish.
  2. You can add both cardamom and cumin powder or either of it.
  3. You can add unprocessed sugar instead of jaggery.
