Beetroot Squash is a very refreshing summer cooler and a stamina booster. ‘Beet the heat’ – It’s summer season and very hot here in Kerala. So I planned to make something refreshing and energy booster. I’ve made Beetroot Squash couple of time before and everyone loved it at home. Our visitors asked us, “Oh what is this?” and some people even thought it’s Grape Juice. Really, after keeping Beetroot Squash for 3-4 days no one finds out that it’s beetroot – it tastes entirely different than a normal beetroot juice.
Some of us don’t like the taste of Beetroot – the earthy flavour, huh? I’ve a solution for that. I 100% guarantee you that with my Beetroot recipes you will never taste the earthy flavour of beetroot again.
Commercially Squashes are made with preservatives and artificial colors. But this Beetroot Squash recipe is 100% natural, no preservatives and no added colors. I’m using lemon juice for the sourness and I don’t add citric acid in my squashes. Because of all these factors my Beetroot squash should be kept in refrigerator and it will last for 1 month. But don’t worry you will finish it with in 1 week. 🙂
