Vazhuthananga Varuthathu (Brinjal Pan Fry) is a easy to make dish with less ingredients. People often refer it as vegetarian fish fry as they feel like eating fish fry, but I don’t know 😉 . Which is lightly crispy outside and soft inside. Any type of Brinjal can be used for making Brinjal fry. I used narrow long type and cut into lengthwise. If you are using round/ thick one (eggplant) slice it round wise. The pieces should not be too thin or thick but a medium size slices will be good for the Brinjal pan fry. Brinjal Bajji is the another Indian snack recipe with Brinjal which is yum with a batter coating. Brinjal fry can be eaten as a snack too.
Tip: When buying brinjal check carefully if there is any small pores on surface. If you find any pores don’t select that as chances are more that you find maggots (puzhu) inside – yuck.
