Kulikki Sarbath – This shaken juice is now becoming very popular in Kerala as a street juice. Though it’s originated from Kozhikode it became very popular in Cochin.
In streets, this juice is prepared by adding lime juice in a tall glass along with the lime peel, sugar syrup, crushed ice cubes and basil seeds. Then the glass is covered with another tall glass and shake it till the crushed ice melted fully.
This is a Cochin version of Kulukki sarbath. In Kozhikode version, split green chilly and some more ingredients are added.
Soak basil seeds for 15 minutes in water.
Squeeze half lime in a shaker. Add that squeezed lime peel, water, ice cubes, sugar syrup, salt and basil seeds .
Shake well and serve immediately. Add some ice cubes on top of it.
