Kerala Style Rava Uppumavu | Semolina Upma

Upma – It’s a common South Indian easy breakfast dish prepared from roasted Semolina (Rava) and vegetables of choice like onion, carrot, green peas, beans etc. In Kerala Upma is called as ‘Uppumavu’ but still some people call it ‘Upma’

Kerala Style Rava Uppumavu (Semolina Upma) is not very moist, but a dry form without sticking together – a grainy structure. In Kerala most of us don’t add vegetables like green peas, beans and carrot pieces like usual South Indian Upma. But when I make upma I use finely chopped carrots and coconut which makes upma very yummy, it’s optional.

Upma can also be prepared with Bread, Broken Wheat, Oats, Rice flakes, Semia etc. But the very common Upma is prepared with Semolina. In older days Anganavadi schools (government preschools in Kerala) served free semolina/ rava upma meals for children. I think still they provide this for kids but not sure :).

Best Combination

  • Banana/ Plantain + Sugar (Pazham and Panjara)
  • Chick peas curry (Kadala curry)
  • Green peas curry
  • Pappad

Ingredients

  • 1. Dry roasted semolina - 1 Cup
  • 2. Mustard Seeds - 1 Teaspoon
  • 3. Dried red chilli – 1 No
  • 4. Shallots/ Onion - 1/2 Cup – Chopped
  • 5. Ginger - 1 Teaspoon - Grated/ Finely chopped
  • 6. Curry leaves - 1 Stem
  • 7. Carrot - 1/2 Cup - Finely Chopped
  • 8. Coconut - 1/4 Cup - Grated
  • 9. Green chilly - 2 Nos - Chopped
  • 10. Salt - As required
  • 11. Ghee/ Coconut oil - 1 Tablespoon
  • 12. Water - 2 Cups

Instructions

  1. Heat oil in a pan and splutter mustard seeds.
  2. Add dried red chilly and roast for sometime.
  3. Add shallots, green chilies, ginger and curry leaves and saute till shallots become translucent.
  4. Add carrot and coconut and saute for 10 seconds.
  5. Add hot water and salt and allow to boil (Preferably boiling water).
  6. Keep the flame low and add roasted semolina and stir well while adding without forming lumps. (Add semolina with one hand and stir with other hand for not forming lumps).
  7. Add a teaspoon of ghee when water gets fully absorbed. Which makes Upma soft.
  8. Switch off the flame when water is fully absorbed and serve warm or normal.

Notes

Don’t add more water as it spoils the Upma consistency and become sticky. Vegetables and Coconut are optional. The ratio of water is 1 Cup Semolina : 2 Cups water. But the amount of water should be increased according to the amount of vegetables added. Stir continuously while adding semolina to water water to avoid lumps formation. While adding the roasted Semolina into the boiling water it will absorb the water quickly and get cooked with in 1 - 2 minutes. The amount of the Upma will be increased as it absorbs water. Adding Shallots instead of Onion increases the taste. Carrot and Coconut alone give nice flavour than adding other vegetables. Upma can be made either in coconut oil or ghee. If making in ghee no need to add ghee at the end of the cooking as mentioned in the recipe.

Recipe in Malayalam

  • ഒരു പാത്രത്തിൽ എന്ന ചൂടാക്കി കടുക് പൊട്ടിക്കുക.
  • അതിനു ശേഷം ഉണക്ക മുളക് ഇട്ടു roast ചെയ്യുക.
  • അതിലേക്കു അറിഞ്ഞു വച്ചേക്കുന്ന ഉള്ളിയും, ഇഞ്ചിയും, പച്ചമുളകും, കറിവേപ്പിലയും ഇട്ടു സോഫ്റ്റ് ആകുന്ന വരെ വഴറ്റുക. മൂക്കണ്ട ആവശ്യമില്ല.
  • അതിലേക്കു കാരറ്റ് ഉം തേങ്ങയും ചേർത്ത് ഇളക്കുക.
  • തിളച്ച വെള്ളം ഒഴിക്കുക.
  • വെട്ടിത്തിളയ്ക്കുമ്പോൾ റവ കുറേശ്ശേ കുറേശ്ശേ ആയി ഇട്ടു ഇളക്കി കൊണ്ടേ ഇരിക്കുക. തീ നല്ലപോലെ കുറച്ചു വയ്ക്കണം.
  • വെള്ളം മുഴുവൻ വറ്റി തീരുന്നവരെ നല്ല പോലെ കൈ എടുക്കാതെ ഇളക്കുക.
  • വെള്ളം വറ്റി കഴിയുമ്പോൾ ഒരു സ്പൂൺ നെയ്യ് ചേർത്താൽ സോഫ്റ്റ് ആയി കിട്ടും.
  • അതിനു ശേഷം നല്ലപോലെ ഇളക്കി വെള്ളം മായം മുഴുവൻ കളഞ്ഞു എടുക്കുക.
  • ഉപ്പുമാവ് റെഡി.
