Kerala Style Madakkappam/ Madakku Dosa (Coconut Stuffed Pancakes) is an easy Brekfast item.  Madakku means folded, Appam/ Dosa means Indian style pancakes – So folded/ stuffed pancake. It’s a common, quick and easy breakfast for most of the Kerala kitchens and a sweet snack for kids too.

Here I’m using Coconut, Sugar and Cumin for stuffing. But wheat can be replaced with Maida/ All purpose flour, Sugar can be replaced with Jaggery and Cumin can be replaces with Cardamom. Also boiled plantain (Ethapazham) also can be used for stuffing. In North Kerala, they use Maida (All purpose flour) and egg to make the batter. And their style of Madakkappam is called as ‘Elanchi’. Mostly  it’s a yellow color  (Color/ Turmeric powder added) stuffed pancake.

And one funny thing is to share with you is Madakkappam was popular as ‘Love Letter’ during my hostel days. Still I don’t know the reason behind it 🙂

Notes

  1. Too thin or thick batter will not give a perfect Madakkappam. It will be difficult to flip or fold the Madakkappam.

Ingredients

  • 1. Wheat flour – 1 Cup (Gothambu podi)
  • 2. Water – 1 ¾ to 2 Cups (Approx)
  • 3. Salt – A pinch
  • For stuffing
  • 4. Freshly grated Coconut – 1 Cup
  • 5. Sugar/ Jaggery (Sharkkara) – 2 Tablespoon or more or less
  • 6. Cumin seeds – 1/8 Teaspoon – Crushed (Jeerakam)
  • For brushing
  • 7. Butter/ Oil – 1 Tablespoon

Instructions

  1. Mix wheat flour, salt and water together and make a smooth batter, adjust water accordingly.
  2. Mix together Coocnut, Sugar and crushed Cumin seeds also and keep aside.
  3. Heat up tawa, brush some oil and pour a ladleful of batter and spread it evenly. Keep the flame medium.
  4. When the batter gets cooked, spread a layer of Coconut mixture on top and cover and cook for sometime.
  5. When done, fold the Madakkappam gently without breaking it.
  6. Cook again for both sides for sometime without covering.
  7. Take it from Tawa and enjoy after cooling down 🙂
