Idiyappam/ Noolappam/ Sevai – A popular Kerala breakfast dish made of rice flour and cooked in steam.

Rice flour passed in idiyappam maker gives noodles like strings. Nool means string, thus the name “Nool appam”.

Idiyappam and Motta curry (Egg curry), Idiyappam and Paal (Sugar added milk/ coconut milk) are well known words for Keralites and come to mind immediately when thinking about Kerala breakfast items.

Here I’m putting some bay leaves in the water for steaming to give a nice aroma to the Idiyappam.:P

As I have large holes in the mould I’m getting thick strings of small Idiyappams. I’m adding grated coconut is on the bottom and top of the Idiyappam, but coconut can be added in the middle of the Idiyappam – Squeeze the half idiyapam, add coconut and then squeeze other half idiyappm on the top of that.

Don’t allow the dough to dry, so always put a wet towel on the top of the dough while squeezing/ steaming other Idiyappams.

  • Milk/ Coconut milk + Sugar
  •  Egg curry
  • Vegetable stew

Ingredients

  • 1. Rice flour - 1 Cup - Roasted
  • 2. Coconut - As required - Grated
  • 3. Water - 1.5 Cup
  • 4. Bay leaves - 2 Nos (Optional)
  • 5. Salt - To taste

Instructions

  1. Boil water with salt.
  2. Add boiled water to the rice flour little by little and mix continuously with a laddle to make the dough.
  3. Knead the dough well with hands when the dough heat come down.
  4. Knead until the dough become soft but neither sticky nor hard.
  5. Half fill the idiyappam presser with the dough.
  6. Brush the idiyappam moulds with oil and sprinkle some grated coconut.
  7. Squeeze the dough on the moulds.
  8. Sprinkle some more grated coconut on the top of idiyappam.
  9. Boil water in the steamer with 1-2 bay leaves which gives a nice aroma to the idiyappam, but bay leaves are optional.
  10. Place the Idiyappams on the steamer, cover it and cook for 8-10 minutes in a medium-high flame.
  11. Serve with curry or coconut milk.
