Kerala Style Fish Cutlet - Fish Croquette

Kerala style Fish Cutlets are deep fried, crunchy outside and soft and perfectly cooked inside and can be served as an appetizer or as a snack.  Cutlets, especially Beef Cutlets and Mutton Cutlets are popular appetizer in Kerala for Christian marriages.

We can make cutlets from anything like fish, beef, mutton, egg, vegetables, soya chunks, paneer etc. I make all type of cutlets with same set of ingredients like potato (which is the second main ingredient of any cutlets), onion, green chillis, ginger, garlic, curry leaves, garam masala and pepper. Apart from these asafoetida (Kayam) and fennel seed powder (Perumjeerakam) are the extra flavoring ingredients for my special cutlets. Also I like to add more garlic and ginger in my cutlets.

To make a perfect shaped cutlets there should not be excess moisture content in the mixture. If there is excess moisture the cutlet will be crumbled while dipping in coatings and while frying.

Ingredients

  • 1. Any boneless fish/ canned fish - 250 gms
  • 2. Potato - 250 gms
  • 3. Turmeric powder (Manjalpodi) - 1/4 Teaspoon
  • 4. Ginger - 1.5 Tablespoon - Finely chopped
  • 5. Garlic - 1.5 Tablespoon - Finely chopped
  • 6. Onion - 1 No - Chopped
  • 7. Green chilli - 2 Nos - Finely chopped
  • 8. Curry leaves - 1 Spring - Chopped
  • 9. Garam masala powder - 1/2 Teaspoon
  • 10. Pepper powder - 1 Teaspoon
  • 11. Fennel seed powder (Perumjeerakam) - 1/2 Teaspoon
  • 12. Asefoetida powder (Kayam) - 1/4 Teaspoon
  • 13. Egg white - 1 No - Beaten well
  • 14. Bread crumbs - 1/2 Cups or for coating
  • 15. Coconut oil - For sauteing and deep frying
  • 16. Salt - As required

Instructions

  1. Boil and mash potatoes and keep aside.
  2. Cook fish with turmeric powder, salt and little water. Cook till all the water get absorbed.
  3. Mince the cooked fish and keep aside. Do not grind too much.
  4. Heat oil in a pan and roast ginger and garlic till fragrant.
  5. Add onion, green chilli, curry leaves and enough salt.
  6. Saute till onion becomes light brown color.
  7. Add garam masala powder, pepper powder, fennel seed powder and asafoetida powder, combine well and switch off the flame.
  8. Let the mixture cool down. Else there will be extra moisture while mixing with fish and mashed potato.
  9. Add the onion mixture and mashed potato in to minced fish and make a stiff dough.
  10. Divide the dough into equal portion and make balls.
  11. Flatten the balls into desired shape, coat with beaten egg white, coat with bread crumbs and deep fry in hot oil in a medium flame.

 

Notes

  • Make a stiff cutlet dough with out much moisture content. So that cutlet will not be breaking while coating and deep frying.
  • If you are unable to shape the cutlet because of the moisture content, put the cutlet mixture in a non stick pan and heat up and saute till the mixture became dry enough to shape.
  • Do not mix or shape the dough when it’s hot or warm. Let it cool down to make perfect shaped Fish Cutlet.
  • Do not over coat the bread crumbs. The bread crumbs will burn easily and set down at the bottom of pan.
  • Coconut oil is preferred for sauteing as well as frying Kerala Style Cutlets.
  • The ratio of fish and potato can be altered according.
  • You can replace egg white with plain flour paste or corn flour paste.
  • Also replace bread crumbs with rusk powder or semolina (Rava) if needed.

  1. ഉരുളക്കിഴങ്ങു പുഴുങ്ങി പൊടിച്ചു മാറ്റി വയ്ക്കുക.
  2. മുള്ളില്ലാത്ത മീൻ മഞ്ഞൾപൊടിയും ഉപ്പും കുറച്ചു വെള്ളവും ഒഴിച്ച് വെള്ളം വറ്റിച്ചു വേവിച്ചു പൊടിച്ചെടുക്കുക.
  3. ഒരു പാനിൽ എണ്ണ ചൂടാക്കി ഇഞ്ചിയും വെളുത്തുള്ളിയും നല്ല പോലെ ഇളം ബ്രൗൺ നിറം ആകുന്ന വരെ വഴറ്റി എടുക്കുക.
  4. അതിലേക്കു സവാളയും പച്ചമുളകും കറിവേപ്പിലയും ആവശ്യത്തിന് ഉപ്പും ചേർത്ത് ഇളം ബ്രൗൺ നിറം ആകുന്നവരെ വഴറ്റുക.
  5. അതിലേക്കു ഗരം മസാല പൊടി, കുരുമുളക് പൊടി, പെരുംജീരകപൊടി, കായപ്പൊടി ഇവ ചേർത്ത് ഇളക്കി തീ അണയ്ക്കുക.
  6. ചൂടാറുമ്പോൾ ഈ കൂട്ടും പുഴുങ്ങി പൊടിച്ച ഉരുളങ്കിഴങ്ങും പൊടിച്ച മീനിലേക്കു ഇട്ടു നല്ല പോലെ കുഴച്ചു എടുക്കുക.
  7. അതിനു ശേഷം തുല്യ അളവിൽ ഉള്ള ഉരുളകൾ ആക്കി ഇഷ്ടമുള്ള ഷേപ്പ് ഇത് കട്ലറ്റ് നു പരത്തുക.
  8. ഷേപ്പ് ചെയ്ത കട്ലറ്റ് ആദ്യം നല്ലപോലെ അടിച്ചു വച്ചിരിക്കുന്ന മുട്ടയുടെ വെള്ളയിലും പിന്നീട് റൊട്ടി പൊടിയും മുക്കി തിളച്ച എണ്ണയിൽ വറത്തു കോരുക.
