“Kerala Style Vegetable Pulao” is very common in South Kerala Christian weddings mostly served with Chicken roast. Vegetable Pulao also called as Fried Rice in South Kerala. ?

It’s very simple to make and very tasty with the less spices added.

Ingredients

  • 1. Basmati rice - 1 Cup
  • 2. Clove - 4 Nos (Grambu)
  • 3. Cinnamon stick - 1 Inch piece (Karukapatta)
  • 4. Cardamom - 2 Nos (Elaykka)
  • 5. Lemon juice - 2 Teaspoon
  • 6. Coriander leaves - A small bunch (Malli ila)
  • 7. Mint leaves - A small bunch (Pudina ila)
  • 8. Ghee - 2 Tablespoon
  • 9. Carrot - 1/2 Cup - Chopped
  • 10. Beans - 1/2 Cup - Sliced thinly
  • 11. Salt - As required
  • --- To Garnish ---
  • 12. Cashew nuts - 12 Nos
  • 13. Raisins - 12 Nos (Unakka munthiri)

Instructions

  1. Wash and sock rice in water for 30 minutes.
  2. Boil water (around 4-5 Cups). When boiled, add cloves, cardamom, cinnamon stick, soaked rice, lemon juice and salt.
  3. Continue boiling in medium flame.
  4. Add bunches of coriander leaves and mint leaves in the boiling water when rice is 50% cooked.
  5. Strain the water when the rice is cooked perfectly. Remove the strands of coriander and mint leaves from the rice (The rice will have the coriander mint flavors).
  6. Heat ghee in a pan fry Cashew nuts and Raisins till golden brown color. When done, take out it and keep aside for garnishing.
  7. In the same pan, saute carrot and beans till become soft. Add required amount of salt for the vegetables (Rice is already cooked with salt).
  8. Add cooked rice and mix well without breaking the rice.
  9. Garnish with fried Cashew nuts and Raisins.
  10. Serve hot.

Notes

- Amount of vegetables can be increased to make the rice more healthy. - Vegetables can be sauteed/ boiled before adding rice. Vegetables will retain a bright color if they are boiled/ steamed. - If vegetables are boiled/ steamed, heat ghee in a pan and add boiled/ steamed vegetables and then add the cooked rice. - Adding lemon juice while boiling rice will give non sticky white colored rice.
