Beetroot Squash - Beetroot Lemon Concentrate

Beetroot Squash is a very refreshing summer cooler and a stamina booster. ‘Beet the heat’ – It’s summer season and very hot here in Kerala. So I planned to make something refreshing and energy booster. I’ve made Beetroot Squash couple of time before and everyone loved it at home. Our visitors asked us, “Oh what is this?” and some people even thought it’s Grape Juice. Really, after keeping Beetroot Squash for 3-4 days no one finds out that it’s beetroot – it tastes entirely different than a normal beetroot juice.

Some of us don’t like the taste of Beetroot – the earthy flavour, huh? I’ve a solution for that. I 100% guarantee you that with my Beetroot recipes you will never taste the earthy flavour of beetroot again.

Commercially Squashes are made with preservatives and artificial colors. But this Beetroot Squash recipe is 100% natural, no preservatives and no added colors. I’m using lemon juice for the sourness and I don’t add citric acid in my squashes. Because of all these factors my Beetroot squash should be kept in refrigerator and it will last for 1 month. But don’t worry you will finish it with in 1 week. 🙂

Notes

  1. Don’t grind the beetroot instead of grating. It will be difficult to strain it. 🙂
  2. Don’t make the syrup too thick, it will crystallize.
  3. Use clean utensils and storage jars.
  4. Beetroot squash will be more tasty  if consumed after 3-4 days.
  5. Serving suggestion: Take 1/3 glass of Beetroot squash and remaining portion of chilled water. Stir the squash with a spoon before serving. No need to add extra sugar.
  6. Don’t worry if you feel the strong earthy smell of beetroot while cooking it. You will smell the magic when you open the squash bottle later.

Ingredients

  • 1. Beetroot - 250 gms - Grated
  • 2. Sugar - 500 gms
  • 3. Cinnamon stick (Karuka patta) - 1 Inch piece
  • 4. Lemon Juice – 100 ml/ 6 Big lemons
  • 5. Water – 500 ml

Instructions

  1. Pressure cook beetroot for 1 whistle with water and cinnamon stick. After 1 whistle simmer and cook for 10 minutes more.
  2. Strain the juice and add sugar.
  3. Boil the juice and sugar mixture again till a syrup consistency or 1 string consistency.
  4. Cool down completely and add lemon juice.
  5. Mix well and sore in air tight containers in refrigerator.

  1. ബീറ്റ്റൂട്ട് ഗ്രേറ്റ് ചെയ്ത ശേഷം കറുക പട്ടയും വെള്ളവും ഒഴിച്ച് കുക്കറിൽ വേവിക്കുക.
  2. 1 വിസിൽ വന്ന ശേഷം തീ കുറച്ചു 10 മിനിറ്റ് കൂടി വേവിക്കുക.
  3. അതിനു ശേഷം നല്ലപോലെ അരിച്ചെടുത്തു പഞ്ചസാരയും ചേർത്ത് വീണ്ടും തിളപ്പിക്കുക.
  4. ഒരു നൂൽ പരുവം ആകുന്ന വരെ അല്ലേൽ സിറപ്പ് ടൈപ്പ് ഇത് ആകുന്ന വരെ തിളപ്പിച്ചു വാങ്ങുക. ഇടയ്ക്കു ഇളക്കി കൊടുക്കണം.
  5. നല്ലപോലെ തണുത്ത ശേഷം നാരങ്ങാ നീര് ചേർത്ത് ഇളക്കി വൃത്തിയുള്ള കുപ്പികളിൽ ഫ്രിഡ്ജ് ഇത് സൂക്ഷിക്കുക.
